Il 14 febbraio è il giorno in cui si aprono i cuori e spuntano le prime gemme di Primavera.
E' il giorno degli innamorati: i cuori ardenti di tutto il mondo scrivono "Valentine" e si scambiano rose e scatole di cioccolati… E' una festa così poetica e romantica che non può passare inosservata per Ginger&Jane e la sua adorabile colomba bianca Bridal!
Ed è con questa storia gentile che dedico a tutti gli innamorati un "Buon San Valentino"!

"Lontano dalla terra ancora innevata si nascondevano dei piccoli fanciulli alati… Vivevano in un meraviglioso giardino volante, sospeso sulle nuvole e ricoperto da infiniti fiori variopinti. Tra soffici fiocchi e profumati petali svolazzavano queste dolci creature dai riccioli scompigliati… Si chiamavano Amorini ed erano muniti di archi e dardi magici, capaci di infondere amore a cuori solitari. Ogni San Valentino tutti gli innamorati consegnavano a colombe bianche meravigliosi messaggi d'amore.. Le lettere erano intrise di teneri sentimenti e tanta speranza: "Will You be my Valentine?" recitavano, sperando che l'amata/o ricambiasse il loro grande amore. Le colombe attraversavano uragani e tempeste per compiere la loro dolce missione.
Non sempre la storia aveva un lieto fine…Ad ogni lettera respinta gli Amorini scendevano sulla terra e saettavano con frecce magiche i loro cuori facendoli innamorare perdutamente. A volte sbagliavano mira e combinavano grandi pasticci! Ma quando la freccia toccava due cuori gentili, nulla tornava più come prima… Gli occhi degli innamorati si incrociavano, i cuori battevano follemente, le loro carezze scioglievano ogni timore e tutto svaniva fuorché il loro amore… Dalle nuvole gli Amorini lasciavano cadere fiori e petali di rose dalla felicità e le allodole si libravano in aria cantando. L'amore aveva trionfato ancora una volta e la Primavera si stava avvicinando…"

"Far from a snow-covered Earth still were hidden little winged boys... They lived in a beautiful garden, suspended in the clouds and covered with countless colorful flowers. These gentle creatures with tousled curls fluttered among fluffy flakes and fragrant petals... They were called Cupids and were fitted with bows and magic arrows, capable of instilling love to lonely hearts. Every Valentine's Day all lovers handed to white doves wonderful messages of love… The letters were imbued with so much hope and tender feelings: " Will You Be My Valentine?" they recited, hoping that the beloved reciprocates their love. The doves crossed hurricanes and storms to fulfill their sweet mission.
The story didn't always have a happy ending... For each rejected letter the Cupids flied to Earth and they shot their hearts with arrows making them madly fall in love. Sometimes they took wrong aims and combined a fine mess! However, when the arrow touched two gentle hearts, nothing came back as before… Their enchanted eyes met each other, hearts beat madly, their caresses dissolved all fear and everything vanished except their love... From the clouds the Cherubs dropped flowers and rose petals for happiness and singing larks floated in the air. Once again love had triumphed and the blooming Spring was arriving…"

Whole Wheat Carrot Muffin

Avete mai assaggiato una torta alle carote? Beh questa è una ricetta ancor più "vegana": è infatti preparata con carote e mele biologiche, che donano all'impasto morbidezza, olio extravergine d'oliva al posto del burro per renderla più leggera, e farina integrale al 100%. Le carote, insieme al gusto speziato di cannella e zenzero (che da Ginger non manca quasi mai..!) la renderanno inoltre dolce e profumata… Davvero irresistibile! Tocco finale è chiaramente il frosting cremoso, che però non sarà solo al burro, ma userò della crema al formaggio spalmabile, che potremo anche abbinare con dello yogurt greco, per rendere questa meraviglia arancione ancora più leggera!

Soffermiamoci un po' sulle carote… Corny sa della loro importanza e nel suo orto non mancano mai! La carota è una radice molto preziosa per il nostro organismo: contiene sali minerali e vitamine che rinforzano il nostro sistema immunitario e digestivo. E contiene soprattutto betacarotene, precursore di vitamina A, che, oltre a migliorare la vista e idratare la pelle, è un potente antiossidante, e quindi combatte i radicali liberi, responsabili della degenerazione cellulare. In poche parole la carota è un vero e proprio elisir di salute e bellezza! Mangiatele regolarmente sia crude con un po' di olio d'oliva per evitare che si ossidino, sia cotte, poiché, a differenza di altri ortaggi, le carote cotte, purché per poco tempo, liberano più contenuto vitaminico!

Il procedimento della nostra Carrot Cake è molto facile. L'importante è fare in casa la purea di mele e grattare al momento delle buone carote preferibilmente biologiche.

Ingredienti

240g farina integrale di grano tenero
2 cucchiaini bicarbonato
3/4 cucchiaino sale
2 cucchiaini cannella in polvere
1/2 cucchiaini noce moscata grattugiata
1 cucchiaino zenzero in polvere
4 uova grandi bio
220g zucchero
183g purea di mele (circa 2 mele)
118ml olio extravergine di oliva
410g purea di carote

Frosting (no vegan)

225g crema al formaggio spalmabile
113g burro
125g zucchero a velo

Innanzitutto grattugiamo le carote finemente. Io utilizzo poi il frullatore ad immersione per ottenere una purea più morbida ed omogenea. Ma possiamo anche lasciare dei pezzi più grossolani.
Metto da parte le carote e passo nel frullatore le mele sbucciate e tagliate a pezzi. Copro la polpa con della carta di alluminio per evitare che diventi scura e metto da parte.

Accendo il forno a 175° e imburro una teglia di 20x20. Io ho scelto di imburrare una teglia tonda più piccola e una teglia per muffins. In un recipiente medio inizio a mescolare gli ingredienti secchi, ovvero farina, bicarbonato, sale, cannella, noce moscata e zenzero. In un recipiente più grande invece monto le uova intere fino ad ottenere una leggera schiuma, aggiungo anche lo zucchero, la polpa di mele, l'olio di oliva e mischio ancora con lo sbattitore. Incorporo gli ingredienti secchi mescolando con un cucchiaio di legno. Infine incorporo anche le carote, sempre e solo mescolando con il cucchiaio. Verso il composto nella teglia o negli stampi e faccio cuocere per circa 30 minuti, controllando di tanto in tanto con uno stuzzicadenti. Lascio raffreddare almeno 5 minuti e poi estraggo dalla teglia.

Per il frosting sbatto la crema al formaggio sgocciolata e il burro ammorbidito finché diventa cremoso. Poi aggiungo poco alla volta lo zucchero a velo.

Spalmo la torta con abbondante frosting senza preoccuparmi tanto dell'aspetto e spolvero con cannella. Ecco pronta la nostra Carrot Cake! La mia preferita per uno study-break di una lunga giornata d'inverno…Le carote saranno un toccasana per i nostri occhi tanto affaticati e il suo profumo quasi natalizio di zenzero e cannella renderà più dolce e magico il triste inverno!

Have you ever tasted a carrot cake? Well this is a recipe even more "vegan": it is made with organic carrots and apples, that give softness to the dough, extra virgin olive oil instead of butter to make it lighter, and 100% whole wheat flour. Carrots, along with the spicy taste of cinnamon and ginger (which by Ginger is ubiquitous ..!) will also make the cake sweeter and fragrant... Really irresistible! The final touch is clearly the creamy frosting, made not only by butter, but I will also use cream cheese, which we can also match with greek yogurt to make this orange wonder even lighter!

Let us dwell a bit on carrots... Corny knows their importance and in his vegetable garden they never fail! Carrots are very valuable roots for our body: they contain minerals and vitamins that strengthen our immune and digestive system. And they mainly contain beta-carotene, a precursor of vitamin A, which improves the view, moisturize the skin and is a powerful antioxidant: it fights the free radicals responsible for cell degeneration. In a nutshell carrots are a real elixir of health and beauty! Eat them regularly both raw with a little bit of olive oil to prevent oxidation, or cooked, because, unlike other vegetables, cooked carrots for a short time release more vitamin content!

The process of our Carrot Cake is very easy. The important thing is to make homemade applesauce and grate good carrots, preferably organic carrots.

Ingredients

240g wholewheat flour
2 teaspoons baking soda
3/4 teaspoon salt
2 teaspoons ground cinnamon
1/2 tsp grated nutmeg
1 teaspoon powdered ginger
4 large eggs organic
220g sugar
183g applesauce (about 2 apples)
118ml extra virgin olive oil
410g carrot puree

Frosting (no vegan)

225g cream cheese spread
113g butter
125g icing sugar

First we finely grate carrots. I use the immersion blender to obtain a more smooth and homogeneous puree. But we can also leave coarser pieces.

I put aside the carrots and I put into the blender apples, peeled and cut into pieces. I cover the meat with foil to prevent it from becoming dark and put aside.
I turn on the oven to 175° and I grease the 20x20 pan. I chose to grease with butter a smaller round baking pan and a pan for muffins. In a medium bowl we begin to mix the dry ingredients (flour, baking soda, salt, cinnamon, nutmeg and ginger). In a larger bowl instead I mount the whole eggs until I get a light foam. I also add sugar, apple pulp, olive oil and I mix until combined. I incorporate the dry ingredients, stirring yet with a wooden spoon. Finally, I also incorporate the carrots, always just stirring with a spoon. I pour the mixture into the pan or into molds and I cook them for about 30 minutes, checking occasionally with a toothpick: it should come out clean. The final sponge is moist but compact. I leave to cool at least 5 minutes and only after I can pull them out from the pan.

For the cream cheese frosting I chose to mix the cream cheese with softened butter until creamy. After I add little by little the icing sugar. I don't like buttercream, but this recipe is really fabulous! For a more lighter recipe just replace the butter with greek yogurt! In this case the frosting is not pipeable, but it sets more after refrigerating it overnight.

I spread the cake with plenty of frosting with a pastry bag or more rustic with a spoon, and I sprinkle with cinnamon. Our Carrot Cake is ready! My favorite one for study-break during a cold day... Carrots are a panacea for our tired eyes and its Christmas scent of ginger and cinnamon makes the winter sweeter and magic!

Ginger Vi regala un'altra delizia del magico inverno di Neve: una fiabesca casetta in pan di zenzero! Non poteva mancare questo prezioso centrotavola per rendere l'inverno ancora più magico!

E' la prima casa in pan di zenzero che costruisco e devo dire che è riuscita davvero bene… Non abbiate paura, è più semplice di quanto sembra! Basta solo un po' di pazienza e soprattutto tanto zucchero a velo!;)

Ingredienti

pan di zenzero
pasta di zucchero azzurra
gomma arabica diluita in acqua
pennellino e stuzzicadenti
colorante alimentare nero
tanta ghiaccia reale
formina a stella piccola
piatto

Ho usato il restante pan di zenzero dei biscotti a stella per ritagliare le sagome della casa. Preparatele prima su dei fogli. Servono due sagome frontali, di cui una con un'apertura per la porta; due sagome per i lati (l'altezza non deve superare la punta del tetto); e due sagome un po' più grandi per il tetto. Provate prima a costruirvela con la carta per assicurarvi che combacino bene. Ritagliamo poi anche tre stelline che faranno da base per l'orologio e le due finestre laterali.

Una volta sfornate le sagome in biscotto, le ricopriamo di pasta di zucchero, facendola aderire con della gomma arabica diluita in acqua.

E' il momento della ghiaccia reale. Prepariamo abbondante ghiaccia reale (un albume per 150g di zucchero a velo). Riempiamo due sac à poche, una piccola con bocchetta tonda di 1mm e un'altra più grande con bocchetta tonda di massimo 1cm.

Iniziamo a riempire le stelle: rifinisco prima i contorni con la sac à poche piccola e poi riempio con quella grande. L'operazione va effettuata velocemente, perché la ghiaccia tende a seccarsi presto. Con una punta di ghiaccia sul retro incollo la stella al centro della facciata e negli altri lati della casa. Decoro poi tutte le facciate con ghirigori a piacere, concentrandomi soprattutto sulla facciata principale e decorando anche intorno alla stella.

Lascio asciugare e inizio a comporre la casa. La ghiaccia fungerà da colla. Non preoccupatevi se cola o gocciola, sarà l'effetto naturale della neve… Appoggio prima la facciata con ghiaccia sul fondo, e aggiungo poi il lato sempre incollandolo alla facciata con una striscia di ghiaccia. Tengo in posizione per un po' aspettando pazientemente che la ghiaccia si asciughi. Lascio solo se sento che non cadono. Aggiungo man mano gli altri lati, ripetendo così l'operazione. Infine incollo i tetti.

Quando la casa è costruita e la ghiaccia si è indurita, riempio il tetto creando delle tegole di ghiaccia: basta spremere dei ciuffetti di ghiaccia finché non sarà riempito tutto il tetto. Ripeto la stessa tecnica anche nell'altro tetto e completo con dei ciuffi lungo tutta giuntura. Per creare l'effetto della neve ghiacciata che pende sui tetti, basta spremere dei piccoli ciuffi di ghiaccia dalla punta del tetto finché non tende a cadere. Non preoccupatevi se poi gocciola… L'effetto sarà ancora più realistico. Sul fondo del piatto poi basterà pulirlo con un panno umido. Continuo in questo modo per tutte le giunture della casetta. Se ci sembra ancora un po' pericolante, rinforziamola ancora con della ghiaccia.

Infine, spolverizziamo con la polverina argentata alimentare che la renderà ancora più magica!

Ginger gives You another delight of Neve's snowy and magical winter: a fairy-tale gingerbread house! We could not miss this adorable centerpiece to make our winter season even more magical!

It is the first gingerbread house I build and I have to say it really makes success… Do not be afraid, it's easier than it looks! Just a little bit of patience and especially a lot of icing sugar!;)

Ingredients

gingerbread
blue sugar paste
gum arabic diluted in water
brush and toothpicks
black food coloring
royal icing
shaper for small star

I used the remaining gingerbread for the star cookies to cut out the house shapes. I prepare the shapes before on paper. We need two shapes for the fronts, including one with an opening for the door; two rectangular shapes for the sides (the height must not exceed the peak of the roof); and two a bit bigger rectangular shapes for the roof. Try first to build the house with paper to make sure that they match well. We also cut out three starlets that will be the basis for the clock and the windows.

Once baked the shaped gingerbread, we cover all the sides with blue sugar paste, using arabic gum diluted in water to adhere.

It's the time of the royal icing. We prepare plenty of royal icing (1 egg white for 150g icing sugar). We fill two pastry bags: one with a small round tip of 1 mm and a larger one with a maximum of 1cm round tip.

We begin to fill the stars. I finish the edges before with a small pastry bag and then I fill the center with the big one. The operation must be done quickly because the icing tends to dry very fast. With a bit of icing on the back I paste the star at the center of the façade and in the other side of the house. Then we can decor all the sides with curls and flourish we like, concentrating especially on the main facade and even decorating around the star.I let the icing dry and the I start to compose the house. The icing will act as a glue. Do not worry if it's runny or dripping, it will be the natural effect of snow... To support the facade I use a strip of icing on the bottom of a plate and then I add icing to paste another side. I hold in place for a while waiting patiently for the icing to dry. I leave only if I feel that they do not fall. Gradually I add the other sides, thus repeating the operation.

Now I glue the roofs. When the house is built and the icing has hardened, I fill the roof by creating icing shingles: just squeeze tufts of icing until the whole roof is filled. I repeat the same technique for the other roof and I complete with tufts along the joint. To create the effect of frozen snow hanging on the rooftops, just squeeze small clumps of icing from the tip of the roof until it tends to fall. Do not worry if they drip... The effect will be even more realistic. We can clean the bottom of the plate with a damp napkin. I continue in this way for all the joints of the house. If the house still seems a little bit unsafe, we can just strengthen the basis with more royal icing.

Finally, we sprinkle with silver food powder that will make our house even more magical!

Our snowy wonderland of white owls, dreamy clocks and magical houses is finished and Ginger wishes You all a sweet Epiphany and a nice trip back home!

A tutti Voi GingerJane augura un magico anno da vivere ad ali spiegate!

E perché sia magico abbiamo bisogno di una bacchetta magica… che allo scoccare della mezzanotte esaudirà i nostri desideri per il prossimo anno!;)

Allora pronti ad esprimere i nostri "Vorrei…" per l'anno nuovo? Tic-tac-tic-tac…3-2-1! Abracadabra e sinsalabim e con un tocco di bacchetta l'anno venturo ci regalerà tutti nostri desideri!

Ecco quello che Ginger augura con questa piccolo pensiero di Capodanno: che tutti i nostri sogni, dai più vicini ai più lontani, si possano avverare… :)

Ingredienti

Biscotto di zenzero

350g farina 00
160g zucchero
150g burro
1 uovo
1 pizzico di sale
150g miele
2 cucchiaini di cannella
2 cucchiai di zenzero
1/4 di cucchiaino di noce moscata
2 cucchiaini di chiodi di garofano
1/2 cucchiaino di bicarbonato
zenzero essiccato e zuccherato

Ghiaccia reale

150g zucchero a velo
1 albume
coloranti alimentare

Decorazione

pasta di zucchero azzurra
polvere alimentare argentata

Utensili

stecche bianche per forno
taglia pasta a stella grande

Per preparare queste deliziose bacchette magiche a forma di orologio, chiamate Cake Pops, preparo prima i tradizionali biscotti in pan di zenzero:

Inizio setacciando la farina con lo zucchero. Aggiungo tutte le spezie e il bicarbonato e infine il burro tagliato a tocchetti. Ci verso anche il miele e mischio il tutto con le mani. Quando il composto è uniforme e bricioloso aggiungo in ultimo anche l'uovo e impasto per bene. Formo una palla liscia e la conservo coperta di pellicola trasparente in frigo per un paio di ore o per tutta la notte.

Trascorso il tempo necessario per rassodare l'impasto, lo stendo col matterello aiutandomi con la farina, e ricavo le stelle con un taglia pasta a forma di grande stella a 6 punte. Poso, partendo dal centro, le stecche, premo leggermente e inforno a 180° per 5 minuti finché semplicemente non saranno dorati, mai troppo scuri.

Tolte dal forno le stelle, le decoriamo prima con della pasta di zucchero azzurra e poi con dei ghirigori in ghiaccia reale, ottenuta sbattendo l'albume con 150g di zucchero a velo. Mi raccomando, non lasciamo passare troppo tempo per usarla, perché tenderà ad asciugarsi velocemente. Ogni piccolo granello di zucchero impedirà di far fuoriuscire la ghiaccia dalla punta sottile della bocchetta. La ghiaccia dovrà essere estremamente omogenea e non troppo liquida. Usiamo una prima sac à poche più larga e versiamo la ghiaccia al centro creando un disco. In un'altra sac à poche invece usiamo la bocchetta liscia numero 1 per ricreare dei sottili decori invernali. I punti vuoti possiamo riempirli con dei puntini di neve.

Lasciamo asciugare e nel frattempo con un piccolo pennello disegniamo l'orologio con lancette e numeri romani. Per ottenere dei disegni precisi consiglio di pulire bene il pennello e poi intingere solo la punta in poco colore nero.

Infine, spolveriamo con della polvere argentata alimentare. I nostri orologi stellari sono pronti per il conto alla rovescia prima del brindisi!!;)

To all of you GingerJane wishes a magical year to live with open wings! And for a magical year we need a magic wand... A magic wand that at the stroke of midnight will grant all our desires along the new year!;)

So are Youe ready to express our "I wish ..." for the new year? Tic-tac-tic-tac ... 3-2-1! Abracadabra sinsalabim and at midnight all our dreams will come true with a flick of wand!

That's what Ginger hopes the New Year will bring us with this little thought: that all our desires, from the nearest to the further, can come true... :)

Ingredients

Gingerbread

350g flour 00
160g sugar
150g butter
1 egg
1 pinch of salt
150g honey
2 teaspoons of cinnamon
2 tablespoons ginger
1/4 teaspoon ground nutmeg
2 teaspoons ground cloves
1/2 teaspoon baking soda

Royal icing

150g icing sugar
1 egg white

Decoration

sugar paste
silver food powder

Tools

big star shape
white sticks for oven

To prepare these delicious magic clock-shaped Cake Pops, first I prepare traditional gingerbread dough:

I start sifting flour with sugar. I add all spices and baking soda and then butter cut into small pieces. I also pour honey and I mix everything by hands. When the mixture is smooth, I add at last the egg and I mix well. I form a smooth ball and I put it in the fridge for a couple of hours covered with plastic wrap. After the time required to firm the mixture is passed, I stretch the dough out with a rolling pin, helping me with flour, and I cut star shapes. I place the sticks pressing a little bit and I bake them at 180 degrees for 5 minutes until they just golden.

Now we can decorate the stars with blue sugar paste and then with blue squiggles in Royal icing, obtained by beating the egg whites until stiff with 150g of icing sugar.

Please do not leave it too long to use it, because it will tend to dry out quickly. Every little grain of sugar will prevent spilling the icing from the thin tip of the nozzle. The icing should be extremely smooth and not too runny. We use a wider pastry bag before and pour it at the center of the star making a disc. In another little pastry bag instead we use the plain nozzle number 1 to recreate subtle winter decorations winter. We can fill blank spots with dots of snow.

I let the icing dry and in the meantime with a small brush I draw the clock with Roman numerals and hands. To obtain accurate drawings just clean the brush perfectly and then dip the tip in a little bit of black color.

Finally, we sprinkle with silver food powder. Our stellar dreamy clocks are ready for the countdown before the toast! ;)
