...Appartenente alla famiglia delle Rosacee, la rosa è un genere di circa 150 specie di arbusti e rampicanti perenni, semisempreverdi o decidui. Il suo habitat è Asia, Europa, Nordafrica e America del Nord. Sono coltivate per i suoi fiori attraenti e molto profumati, prodotti in estate e autunno, e a volte anche per i suoi falsi frutti, detti cinorrodi. Ha fusti spesso spinosi e foglie spesso dentate. I fiori sono solitari o in mazzetti, a volte rifiorenti, e variano molto per colore, dimensione e forma. In base al numero dei petali, possono essere singoli (massimo 8 petali), semidoppi (8-20 petali), doppi (20 petali o più) o molto pieni (oltre 30 petali).

La palette di colori va dal bianco, rosa, pesca, giallo, arancio, rosso e viola. Difficilmente si riesce a ricreare una rosa ibrida blu.

La forma del fiore può essere piatta, a coppa, arrotondata, a centro rialzato, urceolata, a rosetta o pompon.

Le rose si dividono in due gruppi, botaniche e cultivar.

Le rose botaniche sono selvatiche, rampicanti e con fiori singoli a 5 petali spesso profumati, seguiti a fine fioritura da cinorrodi rossi o neri.

Le cultivar, derivate dall'incrocio con rose selvatiche, sono migliaia e si dividono a loro volta in rose antiche, che sono di origine europea o ibridi con rose orientali, e rose moderne.

Persian Love Cake

Gingeroso! Dopo tante attese, vi presento la mia Persian Love Cake, un tortino dai sapori orientali davvero emozionante! Un avvolgente viaggio tra la raffinatezza delle mandorle, la sapidità del pistacchio, la magia delle spezie… E poi, la dolcezza del cioccolato bianco al delicato profumo di rose… E’ così vellutata e fragrante, non potevo non innamorarmi di questa torta!

Dunque, dopo questa entusiasmante premessa, ecco a voi la ricetta:

Ingredienti (per 3 torte dal diametro di 15cm)

200g burro
200g cioccolato bianco
150g zucchero bianco
250ml acqua calda
2 cucchiai sciroppo d’acero (o in mancanza, miele)
1 boccettina di estratto di vaniglia
2 uova grandi a temperatura ambiente
150g farina 00
180g farina di mandorle
2 cucchiai di cannella
1 cucchiaio di zenzero in polvere

Ganache al cioccolato bianco e rose

200g cioccolato bianco
140g panna da montare
qualche goccia di essenza alle rose

Tolgo le uova dal frigo, accendo il forno a 160° e imburro tre teglie tonde dal diametro di 15cm.

In una pentola sciolgo a bagnomaria il burro, il cioccolato bianco, lo zucchero, l’acqua calda, lo sciroppo d’acero e l’estratto di vaniglia. Mescolo con una spatola e quando si sarà sciolto il tutto, spengo e lascio raffreddare. Quando la pentola è tiepida posso anche metterla in freezer per accelerare. Nel frattempo monto a parte le uova intere con lo sbattitore elettrico e poi aggiungo le farine setacciate e le spezie, finché il composto risulta omogeneo. Incorporo alle uova il contenuto della pentola raffreddata e mescolo con la spatola finché non ci sono più grumi. Il risultato è un composto liscio e piuttosto liquido, ma non preoccupatevi! E’ giusto che sia così.

Lo suddivido nelle tre teglie in modo che siano perfettamente uguali e inforno per circa 40 minuti, con prova stecchino.

Nel frattempo prepariamo la ganache al cioccolato bianco e rose. Sciolgo a bagnomaria il cioccolato, la panna e l’estratto di rose. Mescolo finché silura liscio e omogeneo e poi lascio raffreddare. Per accelerare, anche in questo caso, posso metterla in freezer. Quando la anche è tiepida, la monto con lo sbattitore. La consistenza dev’essere morbida e spalmabile.

Ricopro le tortine di ganache con l’aiuto di uno smoother o, per un effetto più liscio, lasciando gocciolare la ganache (passata per qualche secondo in microonde per essere più liquida) senza toccare la torta.

Il tocco finale saranno dei pistacchi sgusciati e profumatissimi petali di rose… E la magia è fatta! Deliziatevi!

Gingerous! After long wait, may I present to you my Persian Love Cake, a really emotional oriental flavoured cake! An enveloping journey between refined almonds, flavoured pistachios, magical spices... And then, sweet white chocolate with a delicate scent of roses… I immediately fell in love with this velvety and fragrant cake!

So, after this exiting intro, there it is, the recipe:

Ingredients (for 3 pies with a diameter of 15cm)

200g butter
200g white chocolate
150g white sugar
250ml hot water
2 tablespoons maple syrup (or lacking, honey)
vanilla extract
2 large eggs at room temperature
150g flour 00
180g almond flour
2 tablespoons cinnamon
1 tablespoon ginger powder

White Chocolate Ganache and Roses

200g white chocolate
140g whipping cream
some drops of rose essence

Decoration

peeled pistachios
1 edible little rose

I remove the eggs from the fridge, and I preheat the oven at 160° and I grease three round 15 cm cake pans with butter.

In a saucepan I melt butter, white chocolate, sugar, hot water, maple syrup and vanilla extract. I mix with a spatula and when it is all melted, I set it aside until completely cooled. I can also put it in freezer to speed up.

Meanwhile, I beat the whole eggs with the electric mixer and then I add the sifted flours and the spices until the compound is homogeneous. I just mix the chocolate pot with the eggs until there are no more lumps. The result is a smooth and rather liquid compound, but don't worry! That's right.

I divide it into the three pans so that they are perfectly equal and I bake them for about 40 minutes, with toothpick test.

Meanwhile, we prepare the ganache with white chocolate and roses. I melt chocolate, whipping cream and rose extract together. I mix until smooth and homogeneous, and then I let it cool. To speed up, even in this case, I can put it in the freezer. At room temperature I can beat it with the electric mixer.The consistency must be soft and spreadable.

I cover the cakes with the help of a smoother or, for a cleaner effect, dripping the ganache (past for a few seconds in the microwave to be more liquid) without touching the cake.

The final touch will be light green pistachios and fragrant rose petals... And the magic is done! Delight!

Lilac Mini Drip Cake

Una piccola esplosione lilla questa Mini Drip Cake: una semi-naked con pan di Spagna al cioccolato, una crema al burro alle rose, gocciolante di ganache al cioccolato bianco con mirtillo, sormontata da un petit bouquet di fragola, petalo di rosa rossa, agerato celestino, fiore di trifoglio rosso, foglie di more e graziose meringhette. Un tortino spontaneo, un’idea deliziosa che possiamo replicare con le infinite palettes di colori Printemps! Basta abbinare meringhe con fiori eduli del nostro prato biologico e dare libero sfogo alla creatività…!

Prima di iniziare ricordiamoci però che se vogliamo usare fiori eduli, dobbiamo usare fiori eduli! Non è così scontato, poiché la tentazione di raccogliere quel fiorellino che fa capolino sul bordo strada o di acquistare dal giardiniere quella rosa che fa tanto pendant con la tua palette di colori, è davvero enorme... E il rischio di intossicamento è davvero alto! Dobbiamo allora trattenerci e… aspettare i tempi della natura e raccogliere solo fiori del proprio giardino o, purché ci sia un’etichetta, acquistare fiori biologici per uso alimentare.

Ecco allora come nasce il mio tortino: all’alba esco in giardino e faccio un giro per i fiori.. Una volta scelti i fiorellini e immaginato il mio tortino, è importante sapere che i fiori non hanno una lunga durata: le rose vanno colte all’alba e subito conservate in frigo dentro un vaso con acqua, finché la torta non è pronta. In questo modo, conserveranno tutta la loro bellezza e soprattutto la loro fragranza. i fiori di campo invece, all’alba sono ancora deboli o chiusi, e appena colti, sfioriscono dopo pochissimo tempo.. Vanno allora raccolti quando la torta è pronta.

Ingredienti

Meringhette (circa 50)

100g albumi a temperatura ambiente
220g zucchero a velo
qualche goccia di succo di limone
colorante viola alimentare

Pan di Spagna

400g zucchero di canna Demerara
220g farina 00
85g cacao amaro
2 cucchiaino di lievito
1 cucchiaino di bicarbonato
1 cucchiaino di sale
2 uova
240 ml latticello
240 ml caffè (circa 2 tazze)
120 ml olio vegetale
1 stecca di vaniglia

Meringa Frosting

2 albumi
100g zucchero semolato
200g burro
1 pizzico di sale
acqua di rose

Ganache al cioccolato bianco e mirtilli

325g cioccolato bianco
125g panna fresca da montare
succo di mirtilli freschi
colorante viola alimentare

Prima di preparare il tortino (ma anche qualche giorno prima!) inizio con le meringhette, seguendo il procedimento più semplice, quello alla francese. Divido le uova e monto l’albume. Aggiungo metà dello zucchero (se non avete lo zucchero a velo, possiamo frullare lo zucchero semolato finché non si polverizza!), qualche goccia di limone e del colorante rosa. Va montato a neve fermissima. Il risultato dev’essere lucido, fermo e deve superare la prova “becco d’oca”, ovvero lasciare nella frusta uno ciuffetto che ricorda il beccuccio di un’oca. Incorporo infine il resto dello zucchero a velo con una spatola, mescolando dall’alto verso il basso, delicatamente, senza sgonfiare il composto. Con una sac à poche e bocchetta tonda formo i ciuffetti su una leccarda rivestita con carta da forno e inforno a 75° per circa 2 ore. Ebbene sì..! Le meringhe necessitano di tempo, perché devono semplicemente seccare. Se il forno non è statico, consiglio di lasciarlo semi-chiuso con l’aiuto di un cucchiaio di legno.

Pronte le meringhette, metto il forno a 180° e inizio a preparare il pan di Spagna, mescolando in un recipiente gli ingredienti secchi setacciati (zucchero, farina, cacao, lievito, bicarbonato e sale). Poi incorporo al composto le uova e il latticello, frullando finché non è omogeneo. Infine aggiungo il caffè, l’olio e la vaniglia. Stendo l’impasto sulla teglia imburrata per 30 minuti con prova stuzzicadenti. Una volta tolta dal forno, la lascio raffreddare. Con un coppapasta di 8 cm ritaglio dei dischetti (per ogni mini cake ne serviranno 3) e conservo in freezer. E’ un’accorgimento che ci servirà per spalmare meglio il frosting.

Per quest’ultimo preparo prima la meringa (questa volta seguo il procedimento svizzero). Monto l'albume a bagnomaria insieme al pizzico di sale. Aggiungo poi lo zucchero e monto ancora per 5 minuti. Tolgo dal fuoco, aggiungo l’acqua di rose e continuo a sbattere fino al completo raffreddamento della pentola. Alla meringa incorporo gradualmente, e sempre sbattendo, i tocchetti di burro a temperatura ambiente. Tolgo dal freezer i dischetti e sulla tortiera girevole, spalmo la crema al burro. Chiudo con un altro dischetto e ripeto l’operazione. Ricopro i 3 dischetti di crema anche intorno, con l’aiuto di uno smoother piatto. Inizialmente sembrerà difficile, ma... relax! E' importante prenderci del tempo per realizzare una semi-naked liscia e pulita.

Rimetto in freezer e creo il mio drip-effect con una ganache ai mirtilli, semplicemente sciogliendo a bagnomaria la cioccolata bianca e aggiungendo la panna e il succo di mirtilli spremuti e passati al setaccio. Se vogliamo un colore viola più acceso, aggiungiamo un colorante alimentare vegetale. Ci potrà sembrare ancora troppo liquida, ma sarà sufficiente lasciarla riposare per un po’ in freezer e poi girarla con lo sbattitore. Attenzione: per un perfetto drip la torta dovrà essere congelata e la ganache fredda e non troppo liquida. Riempio una sac à poche con bocchetta tonda piccola e lascio gocciolare prima sui bordi, alternando un po’. Copro anche tutta la superficie, senza appesantire e non rischiare di far cascare troppa ganache. L’effetto dovrà essere naturale ma con accortezza.

Siamo arrivati alla coverture! Preparo a parte una sorta di “anteprima" della coroncina di fiori, che corro a raccogliere in giardino. Una volta soddisfatta del risultato, li trasferisco delicatamente sul tortino, partendo dai fiori o frutti più grossi. Io sono partita dalla fragola e, mantenendo una certa armonia di colori e forme, ho cercato di posare elementi più piccoli ai lati ed elementi più grandi in secondo piano, secondo un “crescendo” in verticale. Graziosa, vero? Adoro quel lilla!

This Mini Drip Cake is a small lilac explosion: a semi-naked cake with chocolate sponge, rose butter cream, drizzle of white chocolate cranberry ganache, topped by a petit flower bouquet with strawberry, red rose petal, blue mink, red clover flower, berry leaves and pretty meringues. A spontaneous pie, a delightful idea that we can replicate matching the endless Printemps color palettes! Just combine cute meringues with wild flowers of our organic garden and give free rein to your creativity...!

Before we begin, however, remember that if we want to use edible flowers, we must use edible flowers! I know it's really hard not to pick up that blossoming flower on the roadside or to buy from the gardener the pink one that's so pendant with your color palette. But the risk of intoxication is very high. So let’s resit this temptation and wait for the times of nature and let’s pick only flowers in your garden or, as long as there is a label, just buy organic flowers for food.

Here is how my pie is born: at dawn I go out into the garden and take a ride around the flowers. Once I chose the flowers and imagined my pie, it is important to know that the flowers do not last long: the roses should be picked At dawn and quickly stored in a fridge in a jar with water, until the cake is ready. In this way, they will preserve all their beauty and above all their fragrance. The field flowers instead, are still weak or closed at dawn, and as soon as they get caught, they last for a very time. Thats why they are caught when the cake is ready.

Ingredients

Meringues (about 50)

100g white egg at room temperature
220g icing sugar
a few drops of lemon juice
food purple color

Sponge cake

400g cane sugar
220g flour 00
85g bitter cocoa
2 tps of yeast
1 tsp of bicarbonate
1 tsp of salt
2 eggs
240ml of milk
240ml Espresso (about 2 cups)
120ml of vegetable oil
1 vanilla stick

Meringue Frosting

2 albums
100g of semolina sugar
200g butter
1 pinch of salt
rose water

White chocolate blueberry ganache

325g white chocolate
125g whipping cream
fresh blueberry juice
lilac food colouring

Before you prepare the pie (but also a few days before!) let’s start with the meringues, following the simplest procedure, i.e. the French one. I split the eggs and mount the white. I add half of the sugar (if you don’t have the icing sugar, you can blend the caster sugar until it is powder!), a few drops of lemon and pink color. Whip until fluffy, firm and glossy. It must pass the "goose" test, by leaving a tip in the whisk. Finally, I add the rest of the sugar with a spatula, mixing gently from top to bottom without deflating the compound. With a sac à poche and a round nozzle, I make the tufts on a lump covered with baking paper and bake at 75° for about 2 hours. Well yes..! Meringues need time because they just need to dry. If the oven is not static, I recommend leaving it semi-closed with the help of a wooden spoon.

When the meringues are ready, just put the oven to 180° and I begin to prepare the sponge, mixing in dried ingredients, i.e. sugar, flour, cocoa, yeast, bicarbonate and salt. Then I incorporate the eggs and the butter into the compound, whisking until it is homogeneous. Finally I add coffee, oil and vanilla. I pour the mixture on a baking tray with baking paper for 30 minutes, checking with the toothpaste test. Once removed from the oven, I let it cool and then I cut out little 8cm disks (each mini cake will serve 3) and keep them in the freezer. It is a trick that will help us to spread the frosting better.

For this I first prepare the meringues (this time I follow the Swiss procedure). I whip the white eggs at bain-marie together with a pinch of salt. Then I add the sugar keeping whipping for 5 minutes. I remove from the fire, add the rose water and continue to beat until the pot is fully cooled. Then I gradually incorporate the butter at room temperature to the meringue. Removed the diskettes from the freezer, I just pour the butter cream, close with an other disk and repeat the operation.Then I also cover with the butter cream the whole mini cake with the help of a smoother dish. Initially it will seem difficult, but it's important to take some time to achieve a smooth and clean semi-naked.

I put them in the freezer and I start to create my drip-effect with a cranberry ganache, simply melting the white chocolate in the bain-marie and adding the cream and the squeezed blueberries juice to the sieve. If we want a brighter purple color, we add a vegetable food colouring. It may still seem too liquid, but it will be enough to let it rest for a while in the freezer and then beat with the electric whisk. Warning: for a perfect drip the cake must be frozen and the ganache cold and not too liquid. I fill a sac à poche with a small round nozzle and let it drip first on the edges, alternating a bit. I also cover the entire surface, without dropping too much ganache. The effect must be natural but with caution.

We've come to the coverture! First I made a sort of "preview" of the flower chest, picked from the garden. Once satisfied with the result, I transfer them gently to the top of the cake, starting with larger flowers or fruits. I started with the strawberry, and keeping harmony of colors and shapes I tried to lay smaller elements on the sides and larger elements in the background, according to a vertical "crescendo”. Isn’t it cute? I actually love the lilac color!
