Ingredienti
- Macarons con farina di mandorle grossolana
- cono piccolo in polistirolo
- gomma arabica in polvere
- pasta di zucchero nera
- stuzzicadenti
- pan di Spagna
- crema pasticciera all'arancia
- crema al burro
- 200g cioccolato fondente
- 100g panna da montare
- 30g burro
- 1 cucchiaio di zenzero
- colorante alimentare fucsia e blu
- pasta di zucchero bianca
- gomma arabica in polvere
- polvere alimentare argentata

Ingredients
Macarons Cone
The day before, I prepare the Viola Macarons.
To create this shabby effect, I use a more coarse almond flour made by myself: I boil the almonds peel almonds for 2 minutes to peel them. I make them dry for a few minutes in the oven. Then I crush granulated sugar in a mortar until it becomes dust, and I use this it in place of confectioners' sugar. I fill the blender with almonds and sugar in the same quantity and I blend until I obtain a very dry and fine flour. finally I sieve the almond flour. I let it sit for a couple of days and the day before preparing the cake, I make the Macarons following the classic procedure, adding a little bit of purple (or pink and few blue). I fill the pans and let them stand overnight.
In this way we will get lighter and old-looking meringues. Ideal for romantic occasions or Christmas.
The next day, I bake the Macarons and I prepare the chocolate ganache, mixing the bain-marie melted chocolate with whipped cream and butter. I add a tablespoon of ginger and I stir with a whisk. I leave it to cool and when it becomes denser I fill the meringue disks and couple them.
Now I prepare the cake, following the recipe of Ginger's classic sponge cake. The secret of flour starch is really special, because it will make the sponge soft like never before...

I fill the pans and let them stand overnight.
In this way we will get lighter and old-looking meringues. Ideal for romantic occasions or Christmas.
Baked the cake, I cut it twice and I fill the first layer of remaining chocolate ganache and the second layer with orange custard.
I hold the cake with butter cream and then I upholster with black sugar paste the cake and the polystyrene cone, attacking it with arabic gum and water. This will serve to cover the cone before we adorn it with Macarons.
I place the Macarons up stabbing toothpicks into the cone. I have to fill the entire polystyrene cone, except the tip.
I lay the cone at the center of the cake and I decorate the visible edges with the same floral fantasy style of the Viola Domes: green Royal Icing with pink and violet sugar paste flowers.
With the larger flowers I cover the tip of the cone in a harmonious and various way.
Finally , we give a sprinkling of silver glitter over the entire cake, focusing on the flowers… The ViolaTower blooms and is eady to be admired and enjoyed by all! :)
