Ricordo ancora i Mastazzola colanti dal profumo inconfondibile di carrube di nonna Angela… Lei adorava questi dolcetti natalizi. Raramente faceva dolci, ma questi non mancavano mai al pranzo di Natale e come le venivano bene! Non è una ricetta tipica di tutta la Sicilia, ma solo di Barrafranca, nella provincia di Enna. La parola "Mastazzola" deriva probabilmente dai più famosi "Mostaccioli", biscotti al mosto di vino d'uva. Ma questi hanno una particolarità che li contraddistingue: sono fatti di vino di carrube! Ebbene sì, i carrubi sono grandi alberi mediterranei molto diffusi in centro Sicilia ed hanno un profumo importante. Da questi si ricava anche una farina di carrube utilizzata per diversi biscotti, e l'essenza è apprezzata molto nella cioccolata di Modica. Ma questi dolci non ce li ha nessun altro..! E' quindi un enorme piacere per me poter condividere con Voi questa ricetta dal sapore antico e tradizionale, la nostra ricetta dei "Mastazzola", che abbiamo cercato di ricreare fedelmente.

Ingredienti

Vino cotto di carrube

1,5kg carrube
2 scorze di arance essiccate
5 cucchiai di zucchero
cannella q.b.
1 pizzico di pepe

Mastazzola

600g farina
1l vino cotto di carrube
2 arance
miele
mandorle e pistacchi tritati

Preparo alcuni giorni prima il vino di carrube, infornando a 150° le carrube per circa 10 min. Devono gonfiare un po'. Una volta seccati li copro di acqua in una bacinella e li lascio riposare 4 giorni, per far sì che l'acqua prenda il sapore delle carrube. L'acqua deve diventare bordeaux scuro e le carrube si dovranno sbriciolare al tatto. Al 4° giorno li spezzettiamo, togliendo i semi e li filtro a setaccio. Il liquido filtrato lo portiamo a ebollizione per 10-15 min, aggiungendo zucchero, scorze essiccate, aromi e un pizzico di pepe. Ecco un litro di vino cotto di carrube. E' paragonabile al colore del caffè, molto scuro con sopra una piccola schiuma chiara.

Adesso prepariamo i nostri Mastazzola, mettendo a scaldare in una pentola il vino cotto ottenuto, aggiungendo pian piano la farina, facendo attenzione che non faccia grumi. Nell'impasto va anche messa la buccia grattugiata di 2 arance.

Verso l'impasto ottenuto su una spianatoia e velocemente la stendo. Formo dei cilindri e ricavo dei rombi lunghi circa 6 cm, stando attenta che scotta. Li sistemo man mano in una teglia ricoperta di carta da forno a 180° e li inforno per 30 min circa. L'interno dovrà rimanere morbido.
Infine, li immergiamo nel miele fuso e li cospargiamo di polvere di cannella e graniglia di mandorle e pistacchi tostati, che avrò precedentemente preparato.

She rarely baked cakes, but these cookies never failed to Christmas dinner and how good they were! It's not a typical recipe of all Sicily, but only in the province of Enna. The word "Mastazzola" probably derives from the most famous "Mostaccioli" cookies must of grape wine. But they have a special feature that distinguishes them: they are made of carob wine! Ingredients

Carob wine

1.5 kg carob
2 dried peel of oranges
5 tablespoons of sugar
cinnamon to taste
1 pinch of pepper

Mastazzola

600g flour
1l carob wine
2 oranges
honey
almonds and pistachios

At first I prepare a few days before the carob wine, baking the carobs at 150 ° for about 10 min. They must inflate a little. Once dried I cover them in a bowl of water and I let them stand 4 days, to ensure that the water takes the flavor of carob. The water must become deep maroon and the carobs have to crumble when we touch them. On the 4th day I chop them, removing the seeds. I bring the filtered liquid to boil for 10-15 minutes, adding sugar, spices and a pinch of pepper. And here it is a bottle of carob wine. It's similar to the color of coffee, very dark above with a small and clear foam.

Now we prepare our Mastazzola, heating in a pot the carob wine obtained, slowly adding the flour, making sure that it makes no lumps. We also put the zest of 2 oranges.
Towards I pour the dough on a pastry board and I quickly stretch the dough out. I form cylinders that I cut in rhombus of about 6 cm long, being careful why the dough burns. I put them in a parchment paper and bake them for about 30 minutes. The interior should remain soft.
Finally, I dunk them in melted honey and sprinkle them with cinnamon and grounded almonds and pistachios, which I have previously prepared.

Baci Modicani

E per i golosi di cioccolato? La Sicilia non poteva deluderli! Il cioccolato è un ingrediente molto antico della Sicilia e usato anche per piatti salati. Basta citarvi la storia della Cioccolata di Modica: la più antica ricetta della cioccolata si tramanda dagli Aztechi, che la chiamavano "Xocò-Atl", agli Spagnoli conquistatori, fino ad arrivare nella Contea di Modica, unico posto al mondo dove ancora oggi possiamo assaggiare la ricetta autentica della cioccolata. Secondo tale ricetta, il cacao viene lavorato a mano con zucchero e aromi naturali a temperatura bassa in uno spianatoio a mezzaluna detto "valata ra ciuccilatta", così come l'antico "metate" in pietra degli Aztechi, senza subire nessuna fase industriale di concaggio che aggiunge sostanze estranee come il burro. La tavoletta risulta opaca, con una patina bianca, e il cioccolato è granuloso e friabile per la presenza di cristalli di zucchero integri e mai sciolti. Così tutti gli ingredienti vengono esaltati al palato. Gli aromi più "osati" sono il peperoncino, la carruba, il sale marino, ma i miei preferito sono la scorza di arance e il delicatissimo gelsomino.

Oltre a gustarlo in pezzi possiamo preparare dei deliziosi biscotti al cioccolato. Quella che propongo è davvero golosa e semplice! Il puro cioccolato si esalta in pieno e il biscotto resta morbidissimo… Appena sfornati sono una golosità imperdibile! Li ho chiamati "Baci Modicani" per l'afrodisiaca e deliziosa presenza del cioccolato di Modica!
Seguiamo la ricetta:

Ingredienti (1 teglia di biscotti)

200g cioccolato di Modica (fondente, o all'arancio/scorze d'arancio)
150g farina 00
40g burro
80g zucchero
2 uova piccole
1/2 cucchiaino di lievito per dolci
1 pizzico di sale
canditi di agrumi (mandarino, arance, cedro e perché no zuccata)

Sciolgo prima a bagnomaria la cioccolata di Modica. Noteremo che non si scioglierà facilmente e anche una volta fusa, resterà granulosa. Aggiungiamo poi il burro, che la renderà più liscia e brillante. Setaccio la farina con il pizzico di sale e il lievito.
A parte monto per almeno 10 min le uova con lo zucchero finché il composto non diventa chiaro e spumoso. Adesso unisco delicatamente le uova con la cioccolata e inglobo lentamente anche la farina. L'impasto è piuttosto appiccicoso ed io ho usato sac à poche con bocchetta tonda e tappetino in silicone da Macarons per creare delle palline della stessa misura.
Una volta riempiti gli stampini li ricopro con dei canditi misti a pezzetti e inforno a 180° per 10min. Più grossi li facciamo, più resteranno morbidi all'interno. Infine spolvero un po' con lo zucchero a velo ed ecco a Voi i miei primi "Baci Modicani"!

And for sweet-addicted of chocolate? Sicily could not disappoint them! Chocolate is a very ancient ingredient in Sicily and also used for savory dishes. I tell you the ancient story of the Chocolate of Modica: the oldest chocolate recipe has been handed down by the Aztecs, who called the chocolate "Xoco-Atl", then by the Spanish conquerors, arriving finally in the Sicilian County of Modica, the only place on earth where you can still savor the authentic chocolate recipe. According to it, the cocoa is handmade with sugar and natural flavors at low temperature in a half-moon pastry board called "Valata ra ciuccilatta", like the old "metate" stone of the Aztecs, without undergoing any phase of industrial conching wich adds foreign substances like butter. The chocolate tablet results opaque, with a white coating, and the chocolate is grainy and crumbly to the presence of intact and never loose sugar crystals. So all the ingredients are enhanced on the palate. The "dared" aromas are chilli, carob, sea salt of Trapani, but my favorite are zest of oranges and the delicate jasmine.

We can taste it in pieces but we can also prepare some delicious chocolate cookies. What I propose is really tasty and simple! Pure chocolate is exalted in full and the cookie remains soft inside… Freshly baked these goodies are a must! I have called them "Baci Modicani" ("Kisses from Modica") for the presence of aphrodisiac and delicious chocolate of Modica!

Let's see how I made them:

Ingredients (1 tin of biscuits)

250g Modica's chocolate (better fondant or orange/orange peel flavor)
150g flour 00
40g butter
80g sugar
2 small eggs
1/2 teaspoon of baking powder
1 pinch of salt
candied citrus fruits (mandarin, orange, citron and why not pumpkin)

I first melt in bain marie the chocolate of Modica. We note that it will not melt easily, and once melted, it remains grainy. Then we add the butter, which will make it more smooth and shiny. I sieve the flour with a pinch of salt and baking powder. Apart I whip for at least 10 min eggs with sugar until the mixture becomes light and fluffy. Now I gently join the eggs with chocolate and then just slowly add the flour. The dough is quite sticky so I use a pastry bag with round tip and silicon pan for Macarons to create balls of the same size. Once I have filled the molds I cover them with mixed candied fruit into small pieces and I bake at 180° for 10min. Bigger you make them, more soften they remain. Finally I sprinkle a bit icing sugar and here they are my first "Baci Modicani"!

Poppy Shoes

Vi piacciono queste fashionissime scarpe col tacco firmate Ginger&Jane!;) Sono un'idea originale per sostituire le "scarpe rotte" della befana, o per un pensiero colorato e glam a Carnevale, o ancora per dedicarlo alle donne show-addicted l'8 maggio! Beh, sicuramente queste pumps gioiello assolutamente chic saranno apprezzate proprio da tutte!
Sono ripiene di deliziosi gioiellini allo zenzero e cacao, impreziosite e personalizzate da una decorazione colorata e con iniziali a piacere.
Vediamo come farle:

Ingredienti

Scarpa

cartoncino nero A4
carta regalo dorata
nastro colorato (alto: 1cm x 50cm; basso: 5mm x 50cm)
stampa per tacco gioiello
forbici
cola stick

Confetti

una punta di bicarbonato
75g burro
175g farina 00
un piccolo uovo
80g zucchero
75g miele
1 cucchiaino di cannella
una punta di chiodi di garofano in polvere
una spolverata di noce moscata
1 cucchiaino di zenzero
cacao in polvere
gocce di cioccolato
coppapasta (diametro 3cm)
pasta di zucchero e colorante (un colore a piacere e dorato in polvere)
stampini per iniziali
gomma arabica in polvere
carta trasparente per confezionarli
nastro adesivo

Farcitura

200g cioccolato bianco
200g panna
un cucchiaio di miele
zenzero q.b.

Iniziamo con la silhouette della scarpa, da ritagliare su un cartoncino A4 nero. Ricopro la suola con la carta dorata e poi inizio a comporla seguendo l'immagine sotto.
Impreziosisco il tacco con una stampa floreale per rendere le mie pumps un vero gioiello. Io seguo i pattern poppy di Ginger&Jane, ma possiamo sbizzarrirci ovviamente...!

Per dare un tocco di romanticismo, aggiungo anche un fiocco alla punta con il nastro più alto. Faccio prima il piccolo fiocco, avvolgo le punte del nastro intorno alla scarpa e le chiudo con colla stick.

Per i confetti, biscottini colorati al cacao, seguo la ricetta del gingerbread, aggiungendo del cacao e gocce di cioccolato. Lasciata riposare la pasta, la stendo a 3mm circa e la ritaglio in tanti dischetti di 3cm di diametro. Li inforno a 180° per 7-8min. Non devono imbrunire troppo!

Poi stendo la pasta di zucchero colorata, ritaglio dei dischetti con lo stesso coppapasta di 3cm, incido con gli stampini le iniziali e li faccio aderire sui biscotti con la gomma arabica diluita. Abbellisco ancora con dei piccoli fori intorno fatti con metà stuzzicadenti e spennello con la polvere dorata le iniziali, i fori e qualche striscia "grunge" un po' a casaccio.

Preparo la ganache unendo gli ingredienti nel pentolino caldo. Frullo il composto e lo lascio addensare nel freezer per un paio di ore. Dovrà risultare abbastanza densa da non colare. Accoppio e farcisco con la ganache, aiutandomi con una sac à poche.

Per inserirli nella scarpa, ne confeziono cinque avvolgendoli intorno alla carta trasparente e chiudo con il nastro più basso ovviamente dello stesso colore dei Confetti.

Beh ci siamo, basta inserirli nelle scarpette e voilà! La befana potrà sostituire le sue "scarpe tutte rotte" con queste sexy pumps, e riempirle di dolci davvero deliziosi, per il palato e per gli occhi!;)

…Magari la prossima volta vedrò di accontentare anche i Gentlemen... Siate pazienti ometti!;)

Well, certainly these totally chic jewelry pumps will be appreciated by all!;)
They are filled with delicious ginger and cocoa "Confetti", personalized with a colorful decoration with initials.
Let's see how to do these Ginger Shoes:

Ingredients

A4 black cardboard
golden wrapping paper
colored ribbons (big: 1cm x 50cm, small: 5mm x 50cm)
printed heel jewel
scissors
glue stick

Confetti

a tip of bicarbonate
75g butter
175g flour 00
a small egg
80g sugar
75g honey
1 teaspoon of cinnamon
a hint of clove powder
a sprinkling of nutmeg
1 teaspoon of ginger
cocoa powder
chocolate chips
round mould (3cm)
sugar paste and color dust (colors you like and golden powder)
stencil with initials
arabic gum powder
transparent paper for packing them
Scotch tape

Stuffing

200g white chocolate
200g cream
a spoonful of honey
ginger to taste

Let's start with the shoe silhouette, that I cut in a A4 black cardboard. I cover the sole with golden wrapping paper and then I start creating the shoe form.

I embellish the heel with a floral print to make my pumps a gracious jewel. I follow the poppy pattern of Ginger&Jane, but you can create every kind of pattern...!

To give a touch of romance, I add a bow to the shoe tip with the bigger ribbon. I do at first a small bow, I wrap the ends of the ribbon around the toe and then I close them with glue stick.

Now I prepare the Confetti, round and colorful as Confetti, reminiscent of the holiday season of Carnival.

I start with the filling: I make a white chocolate ganache with ginger, boiling the cream with the melted chocolate, also combining ginger and honey. I amalgamate with the mixer and I let it cool in the freezer for several hours. Meanwhile, I prepare the ginger biscuits, following the recipe of gingerbread, but also adding a few tablespoons of cocoa powder and chocolate chips.

Let the dough rest, I roll it out for about 3mm, I cut many disks of 3cm diameter, and I let them bake at 180 ° C for 7-8min. They shouldn't become too brown!

Then I stretch out the colored sugar paste, I cut out disks with the same 3m round mould, I carve initials with stencils, and I join them to the biscuits with diluted arabic gum. I still embellish with small holes made around with a half toothpick and I cover initial, holes and some "grunge" brushes with golden dust. I couple them and I fill them with the ganache, which should be very thick, helping me with a pastry bag.

To insert them into the shoe, I wrap five of them with transparent baking paper closing it with a small ribbon matched with the color of Confetti.
Well, next time I'll try to satisfy even the gentlemen... Be patient little boys!;)
