Pink Meringue

Ecco il primo ciuffo di meringa, detto anche "spumino", di Ginger Jane: leggero, dolcissimo, friabile... e rosa shocking! Ho seguito la ricetta della meringa all'italiana e aggiunto l'aroma di rose e qualche goccia di colorante fucsia.

Meringa italiana

Ingredienti

50ml acqua
qualche goccia di limone
1 pizzico di sale
125g albume
250g zucchero
aroma di ciliegie

Verso zucchero e acqua nel pentolino e sciolgo a fuoco basso. Intanto inizio a montare a neve l'albume, aggiungo gocce di limone e aroma di rose e appena iniziano le prime bollicine dello sciroppo di zucchero (temperatura 120°C), la verso nell'albume montato. Continuo a montare finché non si raffredda la pentola. Completamente fredda, formo le meringhe con la sac à poche spennellata all'interno di gocce di colorante fucsia e qualche goccia di aroma alle ciliegie e inforno a 60-70°C per almeno 4 ore, con sportello socchiuso, evitando umidità.
Vista la durata, è più saggio prepararle la sera prima e lasciarle asciugare tuta la notte…!

English version

Here it is Ginger Jane's first meringue, also called "spumino": light, sweet, airy... and shocking pink! I used to follow the italian meringue recipe, and I add few drops of roses flavor and pink coloring gel.

Italian Meringue

Ingredients

50ml water
few lemon drops
1 pinch of salt
125g egg white
250g sugar
cherry flavor

Towards I blend sugar and water and I melt over low heat. Meanwhile, I start whipping the egg whites, I add lemon drops and roses flavor, and when the first bubbles of the sugar syrup appears (temperature 120°C), I add the syrup to the mounted egg. I continue to whip until the pan cools. Totally cool, I form the little meringues with the pastry bag, which I brushed before with pink coloring gel, and I bake at 60-70 ° C for at least 4 hours, with door ajar, avoiding moisture.
Because of the duration, it's wiser to prepare it the night before and let them dry all through the night...!

Cherry Macarons

(English version below)

Ecco un pasticcino davvero raffinato!…Mesdames et Messieurs à Vous les Macarons de Ginger&Jane!

Non potevo non ricreare questi prelibati pasticcini, resi ancora più raffinati da una decorazione a crudo in stile barocco.

Conosciamo il procedimento:

Ingredienti (per circa 78 Macarons)

Meringa

50ml acqua
coloranti alimentari (solo in polvere)
200g farina di mandorle
150g albumi (circa 5 uova)
200g zucchero a velo
200g zucchero semolato

Farcitura (ganache di base)

120g burro
4 tuorli
120g zucchero

Il procedimento è in sé semplice ma molto rigoroso. Non bisogna sbagliare nessun passo!
Preparo prima le meringhe da accoppiare e poi la crema:

Per i dischetti di meringa all'italiana, mescolo la farina di mandorle molto fine e setacciata con lo zucchero a velo e passo il tutto a setaccio. In un padellino mischio acqua e zucchero semolato, che faccio sciogliere e scaldare finché non iniziano le piccole bollicine (dovrà raggiungere i 118° circa).

Intanto monto a neve metà degli albumi e poi incorporo lentamente lo zucchero sciolto e caldo. E' a questo punto che sarebbe bene aggiungere il colorante (in polvere o gel, mai liquidi). Devo montarlo a neve finché non si sarà raffreddata la ciotola e non sarà liscio e lucido il composto.

Aggiungo nella ciotola di farina e zucchero a velo i restanti albumi non montati, mescolando con una spatola. Ottengo così una pasta di mandorle.

A questo punto inizia la prima fase delicata, detta del "macaronage", che consiste nel versare poco alla volta alla pasta di mandorle gli albumi montati. Devo amalgamarli con decisione senza creare bolle d'aria. Il composto deve cadere dalla spatola in modo fluido e continuo, senza essere né troppo sodo né troppo liquido.

Per la formatura, prendo la mia sac à poche con bocchetta liscia e la riempio di questa meringa ottenuta e formo delle piccole palline (piccole e ben separate) su carta da forno posata già sulla teglia o placca da forno (se siamo alle prime armi, è bene usare dei tappetini in silicone per un migliore risultato: otterremo circa 4 tappetini di 35 meringhe). Raddoppieranno la larghezza e gli spuntoni tenderanno presto ad appiattirsi. Per questo può servire anche un leggero colpetto alla placca, che farà sparire le bolle d'aria.
La seconda fase più importante è il "croutage", che consiste nel farle riposare per un po'. Serve per ottenere la caratteristica superficie perfettamente liscia: al tatto non deve risultare appiccicosa ma lasciare una leggera impronta. Solo lasciandole riposare si eviteranno le crepe in forno. Il tempo dipende dalla temperatura e dall'umidità dell'ambiente: possono bastare 30 minuti (ma non meno) mentre in altri casi è necessaria tutta la notte. L'importante è verificare dopo 30 minuti la pellicola.
Per la cottura, il tempo e la temperatura dipende dal tipo di forno. In generale vanno infornati a 150°-160° per circa 8-15 minuti e sarebbe meglio usare un forno statico. Io che ho un forno ventilato mi sono regolata in questo modo: inforno a 160° per circa 8min, di cui gli ultimi 2 a forno socchiuso. E adesso... guardatevi lo spettacolo! Se avrete seguito tutti i passaggi, otterrete dei Macarons alla perfezione: una superficie liscissima e la caratteristica coroncina esterna. Li lasciamo raffreddare prima di staccarli dalla carta.

Nel frattempo preparo la ganache sbattendo tuorli e zucchero e aggiungo eventuali aromi. Sempre mescolando, riscaldo il pentolino a fuoco dolce fino ad ebollizione e poi aggiungo il burro morbido e lo sciolgo. Sembrerà morbida, ma una volta in freezer per pochi minuti e passata al frullatore nuovamente..sarà perfetta!

Adesso possiamo montarli: scelgo i gusci per appaiarli e li riempio di crema con l'aiuto di una sac à poche. Per avere un maggior effetto "croccante fuori e morbido dentro", possiamo tenerli in frigorifero prima di gustarli. Bon appétit à tous et à la prochaine!

Here there is a really fine confectionary: ...Mesdames et Messieurs à Vous les Macarons de Ginger&Jane!

I could't resist to do this refined dessert, wich I made more elegant with this fine baroque deco.

Let's know the process:

Ingredients (for about 78 Macarons)

Meringue

50ml water
food coloring (powdered only)
200g ground almonds
150g egg whites (about 5 eggs)
200g icing sugar
200g caster sugar

Filling (cream base)

120g butter
4 egg yolks
120g sugar

The procedure itself is simple but very strict. We must not miss any step!
I prepare before the meringues to pair and then the cream:

For the Italian meringue disks, I mix the very fine almond flour and sifted icing sugar and I pass the whole through a sieve.
In a small pan I mix water and sugar. I do not melt and heat until small bubbles begin ( it should reach 118 °).
Meanwhile I mount half of egg whites in a bowl until stiff and then I slowly incorporate the melted and hot sugar. At this point it would be good to add the color (powder or gel, never liquids). I continue to mount until the bowl has cooled down and the mixture is smooth and glossy.
I add to the flour and sugar mixture the remaining unmounted egg whites, stirring with a spatula. I will get an almond paste.
At this point begins the first delicate phase, called "macaronage", which consists in pouring a little at a time to the almond paste the egg whites. I have to mix them with decision without creating air bubbles. The mixture should fall off the spatula in a smooth and continuous way, without being neither too hard nor too liquid.
For shaping, I take my pastry bag with round tip and I fill it with the obtained meringue and I form small balls (small and well separated) already placed on baking paper on a baking tray or sheet (if you are a beginner, it is good to use silicone mats for best results: we obtain about 4 mats of 35 meringues). The width will double and the spikes will tend to flatten out soon. For this we can also gently tap the plate, to release any air bubbles.
The second most important phase is the "croutage" , which consists in making them rest for a while. It serves to obtain the characteristic smooth surface: they should be sticky to the touch leaving a light footprint. Only the croutage will prevent cracks in the oven. The time depends on the temperature and humidity of the environment: we can wait 30 minutes (but not less), while in other cases it is necessary to wait throughout the night before baking. The important is to verify after 30 minutes the surface.
For cooking, the time and the temperature depends on the type of oven. In general we should bake at 150°-160° for about 8-15 minutes and it would be better to use a convention oven. For a fan oven I bake in this way: at 160 degrees for about 8min, of which the last 2 oven ajar. And now... enjoy the show! If you have followed all the steps, the macarons will bake perfectly: with an ultra-smooth surface and the characteristic external crown. We let them cool before removing them from the paper.

In the meantime, I prepare the ganache mixing egg yolks and sugar and adding any flavorings. Still stirring, I heat the pan on low until boiling, then I add the butter and let it melt. It will seem soft, but once in the freezer for a few minutes and passed to the blender again it will be a perfect ganache!

Now we can mount our pretty Macarons. I choose the disks to pair and I fill them with ganache helping me with a pastry bag. To have a greater effect " crunchy on the outside and soft on the inside", we can keep them in the fridge before tasting them.
