Un'idea alternativa per decorare e personalizzare la vostra tavola di Natale: delle candele in stile scandinavo con etichette retrò raffiguranti il mondo degli animali invernali, dalla civetta bianca all'alce, dall'orso polare alla renna Rudolph.
Divertiamoci ad assegnare ad ognuno dei nostri invitati dei simpatici animali e illuminiamo la tavola inserendo nei bicchieri delle piccole candele profumate!

Per ogni candela ci serve:

bicchiere da candela
candela (meglio se al profumo di cannella o mirtillo rosso)
stoffa di lana dalla fantasia scandinava
nastrino a scacchi rosso-bianco
nastrino rosso
etichetta stampata

Cuciamo la stoffa in modo da coprire il bicchiere, incolliamo sulla parte superiore il nastro a scacchi, inseriamo il nastrino rosso con l'etichetta, chiudemmo con un fiocco, e il gioco è fatto! Possiamo aggiungere anche una campanella o, inserire, al posto della candela, un rametto di pino fresco, abbellito con piccole bacche rosse, fissandolo su una sfera di polistirolo… Geniale, no?

La sera di Natale avrà un'atmosfera più giocosa con una tavola così decorata, alla quale non mancherà una bella ghirlanda di pino ricoperta con della neve artificiale, tradizionalmente abbellita con bacche, quattro fiocchi rosso e bianco e naturalmente quattro candele rosse che possiamo posizionare al centro.

An alternative idea to decorate and personalize your Christmas table: candles in Scandinavian style with retro labels representing the winter wildlife world, such as white owl, Canadian moose, polar bear and without forgetting Rudolph the reindeer.
Let's have fun to assign to each of our guests these cute Christmas animals and illuminate the table by inserting inside the glasses small scented candles!

For each candle we need:

glass for candle
candle (better with scent of cinnamon or cranberry)
woolen cloth with Scandinavian pattern
red-white checkered ribbon
red ribbon
printed label

We just sew the cloth to cover the glass, glue on top the checkered ribbon, insert the red ribbon with the label, closing with a little bow, and the cute place holder is done! We can also add a bell or insert, instead of the candle, a sprig of fresh pine, decorated with small red berries, fixed on a styrofoam ball inside the glass... Brilliant idea, isn't it?

Christmas Eve will have a more playful atmosphere with a decorated table with these ironic place holders and naturally a beautiful pine garland in the center, covered with artificial snow, traditionally decorated with berries, four red and white bows and four red candles of course.
A sweet Christmas to all my dears and enjoy Christmas time!

Ecco un pensiero natalizio molto carino e sicuramente apprezzato per l'amorevole confezione: un Sacchettino di Natale, di stoffa, interamente cucito con le mie manine fatate, ripieno di cioccolatini e torroncini bianchi. I sacchetti sono poi abbelliti da dolcissime bambine angelo, dando così un tocco vintage e chic. Possiamo naturalmente riempirle come vogliamo… Oltre a dei semplici cioccolati o torroncini, ho pensato che potrebbe essere geniale preparare del tè sfuso con spezie natalizie, come il Chai Tea, con chiodi di garofano e cannella. Io le ho riempite di cioccolatini bianchi, per rimanere sul tema angelico: dei buonissimi tartufi con nocciola, ricoperti di scaglie di cocco, e delle deliziose praline alla crema di Spekulatius, dei famosi biscotti speziati tedeschi, per me davvero speciali.

Con i sacchetti, ho anche addobbato l'albero di Natale e ricreato un calendario d'avvento, appendendo sul festone di pino i sacchettini numerati, in modo tale da poter aprirne uno ogni giorno a partire dal primo di dicembre.

Per preparare un sacchetto ho bisogno di

stoffa natalizia (13cm x 26cm cad 1)
nastro rosso (40cm x 1cm di altezza)
nastro per bordo (32cm circa x 2cm di altezza)
filo rosso
5 bacche rosse e dorate per decorazione
etichetta (stampa, cartoncino rosso per retro, 4cm di nastro rosso, colla vinilica)
cioccolatini per il ripieno (torroncini, tartufi al cocco, praline agli Spekulatius)

Piego la stoffa in due e mi munisco di una macchina da cucire per chiudere i lati e e rifinire l'apertura con del nastro rosso, con cui coprire l'orlo. Stampo l'etichetta e ritaglio la sagoma di cartoncino rosso per il retro. Inserisco tra i due cartoncini 4cm di nastro rosso di seta piegato in due, lasciando che fuoriesca il passante, e fisso il tutto con colla vinilica. Per completare ho trovato della neve artificiale con brillantini in colorificio e con un pennellino copro tutto il bordo superiore. Lascio asciugare su della carta bianca e nel frattempo preparo il ripieno!

Ripieno

Torroncini morbidi
(ricetta nel post precedente)
Il torroncino è un'idea golosa per riempire i nostri sacchettini natalizi. Possiamo tagliarli a mattoncino, tondi, ricoprirli di cioccolato bianco, per intero o a strisce, e completare posando al centro del torroncino un pezzo della frutta secca utilizzata, come mirtillo rosso, pistacchio, candito, mandorla o nocciola.

Tartufi al cocco

Sono dei golosi "fiocchi di neve" che vagamente ricordano i "Raffaello", ma più morbidi, poiché non hanno cialda all'interno. Sono molto semplici da fare, a freddo, e davvero squisiti!

Ingredienti (per 20-25 pezzi)

180g farina di cocco (80g per impasto e 100g circa per copertura)
2 cucchiai di polvere di cacao, setacciata
60g burro morbido
100g zucchero (Golden Caster)
50g formaggio spalmabile
100g mascarpone
1 bacca di vaniglia
300g cioccolato bianco
25 noci sgusciate

Procedimento
Setaccio in una grande ciotola la farina di cocco e il cacao in polvere. In una pentola piccola faccio sciogliere burro e zucchero a bassa temperatura. Mescolo il burro fuso con le polveri di farina e aggiungo anche il formaggio spalmabile, mascarpone e i semi della bacca di vaniglia. Quando il composto è ben omogeneo, lo lascio un po' rassodare in frigo per poterlo meglio maneggiare. Copro una teglia con carta da forno e divido l'impasto, preparando delle palline di 15cm ciascuna, circa 1 cucchiaino di impasto per ciascun tartufo. Premo con il pollice per inserire la nocciola e arrotolo per bene evitando spigolature. Poi faccio sciogliere a bagnomaria il cioccolato bianco e preparo un piatto con il cocco macinato. Aspetto che il cioccolato fuso non sia eccessivamente caldo e poi con l'aiuto di una forchetta o due stuzzicadenti intingo una pallina alla volta nel cioccolato. Sgocciolo quello in eccesso e la passo nel cocco. Rimetto tutte sulla teglia e lascio raffreddare per circa 2 ore, finché non si asciugano.

Praline agli Spekulatius
Gli Spekulatius appartengono alla mia infanzia… Li adoro e li mangerei in ogni stagione! Sono biscotti al burro speziati con cannella, tipici della Germania, Olanda e Belgio, dove sono chiamati "Speculoos". Raffigurano personaggi natalizi, incisi sulla pasta del biscotto appunto "specularmente". Beh, il gusto è così squisito che qualcuno si è sbizzarrito inventando la "crema di Spekulatius" da spalmante anche sul pane! La crema possiamo facilmente prepararla in casa, e così ho deciso di creare anche delle praline che abbiano proprio il gusto di questi biscotti. Vediamo come:

Ingredienti (15 praline)

125g biscotti Spekulatius
55g formaggio spalmabile
55g crema di Spekulatius
75g cioccolato bianco
2 biscotti Spekulatius tritati per decorare

Procedimento
Mescolo la crema di Spekulatius, formaggio e i biscotti tritati fino ad ottenere una massa omogenea. Creo delle palline uguali di circa 18g ciascuna e le conservo in frigo per un'ora. Faccio sciogliere il cioccolato a bagnomaria e con una forchetta ricopro le palline. Riposo sulla teglia e spolvero con gli stessi biscotti tritati, o polverina dorata se preferiamo.

Crema di Spekulatius

Ingredienti (1 barattolo)

100g biscotti Spekulatius
100g latte condensato non zuccherato
1 cucchiaio di miele di acacia
1 pizzico di cannella in polvere

Procedimento
Frullo i biscotti fino a renderli in polvere. Aggiungo il latte condensato, cannella e miele, e frullo per circa 5 min. Se è troppo densa aggiungo poche gocce di latte fresco. La consistenza deve essere così cremosa da poter essere spalmata sul pane senza gocciolare. Conservo in un vasetto di vetro e posso decorare il coperchio con la stessa stoffa dei sacchettini!;)

Una volta preparati tutti i dolcetti, ritagliamo dei cerchi di carta per dolci marrone o da forno da inserire nel sacchetto, e riponiamo dentro i cioccolatini. Chiudiamo prima con le bacche, che stringono bene il sacchetto con il fil di ferro. Avvolgiamo il nastrino rosso con l'etichetta ben due volte, in modo da avere il fiocco sopra l'etichetta, ed ecco preparate con tanto amore i nostri piccoli pensieri di Natale. Possiamo regalarli ai nostri amici, posarli sui piatti dei nostri invitati come segnaposto o regalo di cena, appenderli sull'albero di Natale, o su un filo o festone per realizzare un calendario d'avvento.

Here there is a very nice gift for Christmas, certainly appreciated for the loving pack: a little sewn Christmas bag entirely made with my fairy hands stuffed with white chocolates. The bags are then embellished with sweet baby angels, giving them a touch of vintage and chic. Of course we can fill them as we want... In addition to the simple chocolates, nougat or , I thought it might be clever to prepare loose tea with Christmas spices, such as Chai Tea, with cloves and cinnamon. I have filled them with white treats, to stay on the angelic topic: delicious truffles with hazelnut, covered with coconut flakes, and delicious praline with "Spekulatius" cream, famous German's gingerbread cookies, really special for me.

We can also decorate the Christmas tree with these delicious bags and recreate an advent calendar, hanging the numbered bags on the pine garland, so you can open one each day from December 1st.

To prepare 1 bag I need

Christmas cloth (13cm x 26cm)

red ribbon (40cm x 1cm high)

red tape for rim (approximately 32cm x 2cm high)

red thread

5 berries for decoration (red and gold)

label (printed, red paper shape for the back, 4cm red ribbon, glue)

chocolates for the filling (nougat, coconut truffles, Spekulatius pralines)

I fold the cloth in two and I use a sewing machine to close the sides and cover the opening with red tape. I print the label and cut the same shape with red paper. I insert between the two shapes 4cm red ribbon folded in two, letting escape the passer, and I fix it all with glue. To finish I found artificial snow with glitter in a paint factory. So I can brush the top of the edge and let it dry on a white paper. In the meantime I prepare the stuffing!

Stuffing

Soft Nougats
(previous post)
The nougat is a tempting idea to fill our Christmas bags. We can cut them in little bricks, round, cover in whole or stripes with white chocolate, and complete laying in the middle a piece of its flavor fruit, like cranberry, pistachio, candied, almond or hazelnut.

Coconut Truffles
These are greedy snowflakes that vaguely resemble the Raffaello pralines, but softer, because they have no wafer inside. They are very simple to do, cold, and very yummy!

Ingredients (20-25 pieces)

180g coconut flour (80g for dough and 100g for coverture)

2 tablespoons of cocoa powder, sifted

60g soft butter

100g sugar ( Golden Caster )

50g cream cheese

100g mascarpone

1 vanilla bean

300g white chocolate

25 shelled walnuts

Procedure
I sieve into a large bowl coconut flour and cocoa powder. In a small saucepan I melt butter and sugar at low temperature. I mix melted butter with the flour dust and also add cream cheese, mascarpone and the seeds of one vanilla bean. When the mixture is very smooth, I leave it a bit firm up in the fridge in order to better handle. I cover a baking sheet with parchment paper and with the dough I prepare balls of 15cm each, about 1 teaspoon of dough for each truffle. I press with the thumb to insert the hazelnut avoiding gleanings. They should be nice and spheric. Then I melt white chocolate in a double boiler and I prepare a dish with coconut flour. So I dip them into the chocolate with the help of a fork, drip the excess and then I roll them quickly in the coconut flour. I put them all on the pan and let them cool for about 2 hours, until they dry.

Spekulatius Pralines
Spekulatius belong to my childhood... I love them and I could eat them all year round! They are flat and brown butter cookies spiced with cinnamon and other Christmas spices, typical of Germany, Holland and Belgium, where they are called "Speculoos". They have images or figures about S.Nicholas, stamped on the front. Well, the taste is so exquisite that someone has been satisfied by inventing the "Spekulatius cream", smearing it even on bread! The cream can easily be prepared at home, and so I decided to create pralines with their delicious taste. Let's see how:

Ingredients (15 pralines)

125g Spekulatius biscuits

55g cream cheese

55g Spekulatius cream

75g white chocolate

2 Spekulatius, chopped to decorate

Procedure
I mix the Spekulatius cream, cream cheese and crushed cookies until a homogeneous mass. I make equal little spheres to about 18g each, and I keep them in the fridge for an hour.
I melt the chocolate in a double boiler and cover them entirely with the help of a fork. I let them cold on the baking sheet, sprinkled with the same crushed cookies on the top, or with golden powder to give a more chic touch.

Spekulatius Cream

Ingredients (1 can)

100g Spekulatius cookies

100g unsweetened condensed milk

1 tablespoon of honey

1 pinch of ground cinnamon

Procedure
At first I chop the cookies to powder. Then I add condensed milk, cinnamon and honey, and I continue to blend for about 5 min. If it seems too thick we can add a few drops of fresh milk. The consistency should be creamy so that it can be spread on bread without dripping. I keep it in a glass jar decorated with the same cloth of the bags!;)

Once prepared all the cookies, we can complete our bags: So I cut out circles of brown baking paper to insert in the bag and then we place inside the chocolates. At first we close with the decoration berries, clutching the bag completely with the wire. Then we wrap the red ribbon with the label twice, in order to have the bow above the label, and here there is our cute little Christmas thought, prepared with much love and care. We can give them to our friends, place them on the plates of our guests as a placeholder or gift dinner, hang them on the Christmas tree, or on a stocking garland to make an advent calendar.

Torrone Morbido - Soft Nougat

Quest'anno il Natale di Ginger è vintage e tradizionale… Ho scelto di preparare sacchettini retrò ripieni di praline, truffles ed ovviamente torroncini! Perché come sappiamo, non è Natale senza torrone! Ma forse non tutti immaginano di poterlo preparare in casa…!
Il torrone, con mandorle tostate (da cui l'origine latina di "torreo", ovvero "tostare"), zucchero e albume, ricoperto da due ostie, è un tipico dolce della tradizione natalizia, non solo in Italia: conosciuto già ai tempi romani con il nome di "Cupedia" e diffuso dagli arabi lungo tutte le coste del Mediterraneo, ha un'antica preparazione anche in Catalogna, Provenza. Il torrone della tradizione cremonese invece risale al 1441, quando venne servito in occasione del banchetto di nozze tra Francesco Sforza e Bianca Maria Visconti, riproducendo il "Torrazzo", la torre campanaria della città.
Due sono le varietà principali di questo prelibato dolce: il torrone duro, di lunga cottura e più zucchero, con mandorle intere e dall'aspetto caramellato e friabile, molto diffuso nel Sud Italia; e il torrone morbido, con maggiore quantità di miele e cottura veloce per renderlo più tenero e bianco, soprattutto preparato nel Nord Italia.
Oggi la principale produzione di torrone industriale si concentra a Cremona e Benevento, e le ricette tradizionali presentano numerose rivisitazioni: è mandorlato o nocciolato, con frutta secca o canditi, ricoperto di cioccolato o aromatizzato con arancia o limone.

Io adoro il torrone morbido…ed è per questo che ho deciso di regalarvi la mia ricetta, che ho voluto arricchire con pistacchi, zenzero e mirtilli rossi secchi! Gustosissimo! L'importante è che vi procuriate un termometro da cucina, per assicurarvi la giusta cottura dello zucchero… Perché si sa, quando si lavora lo zucchero, è fondamentale la temperatura.

Vediamo come prepararlo:

Ingredienti (per 1kg di torrone)

250 g di miele di arancio o acacia
100 ml di acqua con 410ml di zucchero
40 g di albume (circa 2 uova)
600 g di mandorle pelate
100 g di mirtilli rossi, o zenzero candito, o pistacchio
buccia di un’arancia grattugiata
1 bacca di vaniglia
2 fogli di ostia

Inizio a tostare le mandorle in forno a 180° finché non saranno dorate: a quel punto dovrei già sentire il profumo di mandorle tostate… Spengo il forno e le lascio dentro.
Contemporaneamente (poiché sarà importante usare le mandorle ancora calde) metto il miele in un pentolino e con un termometro lo porto alla temperatura di 120° (dovrà fare tante bollicine). Nel frattempo e sempre contemporaneamente, monto gli albumi in una pentola grande. Giunto a 120°, allontano il miele dal fuoco, lo mescolo per un paio di minuti, abbassando così un po' la temperatura, e lo verso a filo nell'albume montato, continuando a montare per circa 5 minuti. La consistenza sarà più vellutata della meringa.

Ora, lo zucchero: insieme all'acqua lo faccio sciogliere fino ad arrivare alla temperatura di 147°. Durerà un po' e sarà pronto quando farà tanta schiuma. Lo verso velocemente a filo nella meringa. Non deve raffreddare, altrimenti si cristallizza e sentiremo lo zucchero a pezzetti nell'impasto! Continuo quindi a montare, aggiungo la buccia grattugiata, la vaniglia e aspetto che si indurisca. Mi raccomando, non smettiamo di frullare se non è abbastanza elastico. Quando le fruste inizieranno a faticare, passo all’uso di un cucchiaio, per evitare che con l'impasto duro, il mio sbattitore si rompa!;) L'impasto deve essere duro, colloso e attaccarsi al cucchiaio. A questo punto posso incorporare le mandorle, assicurandomi che siano ben calde, ed infine i canditi. Continuo ad impastare ancora per qualche minuto e poi verso il tutto sul foglio di ostia, schiacciandolo col cucchiaio e le mani bagnate, livellandolo bene. Lo copro con un altro foglio di ostia e, con l'aiuto di un matterello, lo stendo in modo regolare finché non raggiunge uno spessore di circa 1,5 cm.

Lo lascio raffreddare per almeno un paio di ore e lo taglio a cubetti o rombi… Io mi sono sbizzarrita a creare dei dischetti ricoperti di cioccolata bianca… Ma, anche se belli da vedere, lasciano diversi pezzi residui meno appetibili…! Quindi consiglierei di tagliarla e rettangoli, per facilitarvi il lavoro, ed eventualmente ricoprirli con del cioccolato versato a filo.

Il risultato è davvero sorprendente! Chi avrebbe mai detto, che in casa riesce così bene? Vi assicuro che, una volta assaggiato, non comprerete mai più del torrone industriale, perché la morbidezza, gli aromi naturali e il profumo delle mandorle appena tostate vi conquisteranno per sempre!;)

This year is Ginger's Christmas very vintage and traditional... I chose to prepare retro bags stuffed with pralines, truffles and of course nougat! Because as we know, there's no Christmas without nougat! So don't buy nougat, but just try to cook nougat at home! It will be a great surprise!

Nougat, is a typical Christmas dessert, prepared with almonds (hence the Latin origin of "torreo", which means "to toast"), sugar and egg white, covered with two hosts: already known at the time Romans under the name of "cupedia" and spread by Arabs along all the coasts of the Mediterranean, it has a long tradition in Italy, but also in Catalonia and Provence… The tradition of Cremons Nougat dates back to 1441, when it was served at the wedding banquet between Francesco Sforza and Bianca Maria Visconti, reproducing the "Torrazzo", the bell tower of the city.

There are two main varieties of this delicious dessert: the hard nougat, long cooked and with more sugar, contains almonds and is caramelized and crumbly-looking, very common in Southern Italy; the soft nougat has greater amounts of honey and is fast cooked to make it more tender and white, especially prepared in Northern Italy.
Today the main production of industrial nougat in Italy is concentrated in Cremona and Benevento, and traditional recipes have many interpretations: it has almond or hazelnut, dried fruit or candied fruit, covered with chocolate or flavored with orange or lemon.

I love white soft nougat... and that's why I've decided to give you my recipe, enriched with pistachios, ginger and dried cranberries! Yummy! The important thing is to have a cooking thermometer to cook the sugar...

Let's see how to prepare it:

Ingredients (for 1kg of nougat)

250g orange or acacia honey
100ml water with 410ml of sugar
40g egg white (about 2 eggs)
600g peeled almonds
100g cranberries (or candied ginger, or pistachio)
grated peel of one orange
1 vanilla bean
2 sheets of wafer

I start to toast the almonds in the oven at 180 degrees until golden. At that point I already smell the scent of roasted almonds… I turn off the oven and keep them inside. At the same time (it will be important to use still hot almonds) I put the honey in a saucepan and bring it at the temperature of 120° with the help of a thermometer (it should do many bubbles). Meanwhile and always at the same time, I whip the egg whites in a large pot. Arrived at 120°, I move away the honey from the heat, stir it for a couple of minutes, thus lowering a bit the temperature, and then I pour it to the whipped egg whites, continuing to mount for about 5 minutes. The texture will be more smooth than a meringue.

Now, sugar: I melt the sugar with water up to 147°. It will be ready when it makes a lot of foam. Then I flush it quickly to the meringue. Be sure to do not cool down, otherwise the sugar crystalizes! I continue to mount and I add the grated rind, vanilla. Do not stop to blend if it is not elastic and hard enough. When the whips will begin to sweat, step to the use of a spoon, to prevent that the mixer breaks!;) The dough should be hard, sticky to the spoon. At this point I can incorporate almost hot almonds and finally the candied fruit. I continue to knead for a few minutes and then I pour the whole to the sheet of wafer, leveling with a spoon and wet hand. I cover with another sheet of wafer and, with the help of a rolling pin, I knock it down regularly until it reaches a thickness of about 1.5 cm.

I leave it to cool for at least a couple of hours and then I can cut the nougat into cubes… I created diskettes covered with white chocolate... But, though beautiful to see, they leave several less attractive pieces...! So I would recommend cutting it into rectangles, to make the job easier, and possibly drizzle white chocolate.

The result is truly amazing! Who would say, that home-made nougat would be so delicious? I assure you that, once tasted, you won't buy anymore industrial nougat, because the softness, the natural flavors and the aroma of freshly roasted almonds will conquer you forever!;)
